Fish ceviche with tomatoes, Old Acapulco style

Look for the fish Sierra, Pacific Sierra, or Sierra Mackerel
Sierra (Scomberomorus sierra):  Sierra is one of the most common and feisty members of the Scombridae family: Tuna, Bonito, and Mackerel, found in Mexican waters. Any firm, not oily fish filet will be great too!
Serves 5
  • 500 g Fish filet. Clean , no spines, no skin, thoroughly washed
  • 6 pcs. Ripe Roma tomatoes, no skin, finely chopped, seeded
  • 50 g Fresh cilantro, chopped
  • 4  cups Freshly squeezed lime juice
  • ½  pc. White onion, chopped
  • ½  cup Good  quality ketchup
  • to taste Serrano peppers, chopped
  • 2 cups Orange juice, freshly squeezed
  • 1 cup Pitted green olives, no brine, washed
  • 2 tbsp Olive oil
  • to  taste Salt
  • Cut fish filet in cubes about 1 cm each,
  • Marinate in lime juice for at least 20 minutes, in the fridge
  • Take excess lime  juice off fish , and wash again
  • Add all other ingredients, and mix with fish pieces until uniform
  • Check seasoning, leave  inside the fridge
  • Serve cold with sesame tostadas, tortilla chips and soda crackers
